Here are five festive food ideas to save you time and money this holiday.
- Stuffed Portobello Mushrooms
Portobello mushrooms are a delightful vegan alternative, and preparing them is simple. These mature cremini mushrooms have a meaty texture and intense flavour, contain vitamins, antioxidants, and minerals and have a low-calorie content.
Preheat the oven to 375°F while removing mushroom stems, and scrape out the gills. Heat olive oil and sauté garlic and red onions until fragrant. Add spinach and bell peppers, cook until wilted, and stir in cooked quinoa, salt, and pepper. Next, add the quinoa mixture to the mushroom caps, then place them on a baking sheet.
You can prepare this meal ahead of time, refrigerate it, and then simply pop it into the oven for 25 minutes or until the mushrooms are tender, giving you a handy option for vegetarian and vegan guests.
2. Pomegranate-Glazed Roasted Carrots
There’s no greater way to add flavour and a burst of colour to your Christmas dinner table than with this vibrant carrot meal. Here’s how to prepare this elegant dish to impress your guests.
Start by turning the oven heat to 400°F. Toss carrots, pomegranate molasses, and olive oil in a bowl with honey, pepper, and salt. Arrange the carrots in one layer on a baking sheet, then roast for 30 minutes or until tender and slightly caramelised. Garnish with fresh parsley before you serve. If the carrots are too tart after cooking, drizzle some honey into melted butter and toss them through it.
3. Vegan Lentil Shepherd’s Pie
This is a hearty vegan twist on a classic, flavourful meal, perfect for Christmas dinner. The lentils provide a protein alternative to meat, and the mashed potato toppings add a creamy finish. Lentils may not be everyone’s favourite, but they are yummy when cooked well and make great comfort food.
To prepare this dish, you must first preheat your oven to 375°F. Next, add onions, carrots, garlic, and celery to a large skillet and sauté until softened. Add cooked lentils, thyme, tomato paste, rosemary, vegetable broth, salt and pepper, then simmer for 10 minutes. Transfer to a baking dish and spread mashed potatoes over the top of the mixture.
Bake for 30 minutes or wait for the filling to bubble or until the mashed potatoes are golden. Again, this is a meal that can be prepared in advance and just popped into the oven. It also makes a great day-after-Christmas no-fuss meal to use up leftover mash.
4. Smoked Salmon and Dill Pinwheels
This visually appealing meal is an excellent appetiser for your Christmas spread. Making them only takes 2 minutes, and they can be a moreish party treat or served as a great snack.
Start by laying out large tortillas and spread each with a thin layer of cream cheese. Next, evenly layer the smoked salmon over the cream cheese and sprinkle chopped dill. Once done, drizzle the top with fresh lemon juice and roll up the tortillas tightly. Use just enough lemon so the flavour goes well with dill and salmon, or your tortilla will get soggy.
Slice them into pinwheels and serve chilled. Alternatively, you can wrap the roll uncut in cling film and put it in the fridge while you wait for your guests, after which you’ll cut the rounds shortly before the party starts.
5. BBQ Meatloaf
Preheat the oven to 350°F. Mince the chopped onion, carrot, garlic, and red pepper in a food processor. Next, cook the veggies in olive oil for 5 minutes, then leave them to cool. Then mix the vegetables with ground beef, breadcrumbs, salt, parsley, eggs, and Worcestershire sauce and press the mixture into a loaf pan. Bake the meatloaf for 60 minutes at 350°C while making the glaze.
Simmer BBQ sauce, honey, brown sugar, and bourbon for 5 minutes, then add some of it to the meatloaf with five minutes of cooking remaining. Let it cool for 5 minutes, unmold, and serve with the rest of the glaze on the side. This meatloaf is a great alternative to turkey and ham or as a post-Christmas day meal.
