This September, Singapore’s dining scene is about to get a whole lot more exciting. The Westin Singapore is welcoming one of Australia’s most celebrated culinary innovators, Chef Nelly Robinson, for an exclusive residency at its signature gastro-bar, Cook & Brew, from 11 September to 11 October 2025.
Best known for his bold, playful approach to food, Chef Nelly has earned international acclaim for transforming familiar flavours into imaginative, multi-sensory dining experiences. His flagship NEL Restaurant in Sydney is famed for whimsical tasting menus inspired by nostalgia, while his gastropub, The Nag’s Head, blends British tradition with modern flair. Now, local food lovers can experience his unique creativity right here in Singapore.
Best of Chef Nelly Robinson’s Set Dinner
On 11 and 12 September, guests can indulge in the Best of Nelly’s Set Dinner from 6 p.m. to 10 p.m., priced at $88++ per person. This multi-course journey features some of his most iconic creations, including:
- Snacks: Biryani Shot, Potato Dabs, Steak Bake, Rye Bread with Redcurrant Jam & Salted Butter, Crab Tarts
- Entrée: Kingfish Tandoori
- Main: Beef Wellington
- Dessert: Mini Banana
Adding to the experience, Chef Nelly himself will be present to interact with diners, sharing stories behind each dish and offering a personal connection that few chefs of his stature provide.
Plates & Palates: An Interactive Lunch
The highlight of the residency is Plates & Palates, an interactive lunch event happening on 13 September, from 12 p.m. to 3 p.m. For $68++ per person (pre-payment required), guests will get the rare opportunity to plate a dish alongside Chef Nelly before enjoying a curated set lunch that embodies his signature playful style. With only one session available, this intimate event promises to be a must for any true foodie.
Extended Menu at Cook & Brew
Even after Chef Nelly’s departure, diners can continue to enjoy his influence. From 11 September to 11 October 2025, Cook & Brew will feature a special menu inspired by his visit, including highlights from his set dinner and signature gastropub bites such as:

- Melting Ginger Parkin – S$15++
